Exceptionally long aging.
Occasionally, very old Macallan such as this, may have a small deposit of white crystal in the bottle. This is a characteristic of exceptionally long aging in wood. It is a completely normal occurrence, does not need to be removed, and has no adverse affect upon health, whisky quality or flavour.
