"Founded in 1898 by the unforgettably named Septimus Parsonage this now “silent” distillery was originally know for its unusually large stills. More recently called Glenn Esk, it produced as Hillside from 1965-1980. To enjoy this fine 25 years old cask-strength single malt as its best, measure one part whisky to two parts still water at room temperature. Any slight cloudiness is normal in an unfiltered cask-strength malt. On tasting, aromas of cedar and vanilla reveal a light body with a malty dryness and a surprisingly crisp, refreshing character."
